At The Shelbourne, Autograph Collection, one of Dublin's most prestigious and historic luxury hotels, Bar and Lounge Manager Sean McGoldrick has created a unique cocktail by blending several familiar favorites. At Rosewood Mansion in Turtle Creek-one of Dallas' most prosperous places-guests squeeze into The Mansion Bar to sit and relax while enjoying a warm bourbon made from the memories of home and family by chief bartender Mickey McMillen . "This drink was inspired by my desire for my family during my service in the Navy," Macmillan said. "It's reminiscent of my grandma's house, her baked goods, and her warm hugs; bourbon represents my grandfather, he puts a glass carefully in the office, and is often caught by my grandma."

In an Irish coffee glass, mix the pumpkin mixture, bourbon and hot water. Stir gently and season with whipped cream on top. Decorate with cinnamon sticks. Make a cocktail.

Spread the cream on the top of the cup, sprinkle with a pinch of sugar, and lightly light it from the top (using a stick or cooking torch) to avoid breaking the glass. Makes about six drinks.
